In case you ever get tired of Mexican rice here is an alternate recipe for something a little bit lighter in flavor. I enjoy the freshness of the lime and the cilantro is a good flavor. Pairs well with black beans!

Cilantro Lime Rice

White rice seasoned with cilantro and lime

Ingredients

  • 1 cup long-grain white rice
  • 2 Cups Water
  • ½ teaspoon salt
  • 1/2 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • ¼ Large Onion

Directions

  1. In a sauce pan, add rice, water, and salt. Cover sauce pan and bring water to a boil then reduce to a simmer. Cook for about 15-20 minutes. Check on rice closer to the 15 minute mark.
  2. Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, water, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.
