In case you ever get tired of Mexican rice here is an alternate recipe for something a little bit lighter in flavor. I enjoy the freshness of the lime and the cilantro is a good flavor. Pairs well with black beans!
Cilantro Lime Rice
White rice seasoned with cilantro and lime
- 1 cup long-grain white rice
- 2 Cups Water
- ½ teaspoon salt
- 1/2 cup fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 2 garlic cloves
- ¼ Large Onion
- In a sauce pan, add rice, water, and salt. Cover sauce pan and bring water to a boil then reduce to a simmer. Cook for about 15-20 minutes. Check on rice closer to the 15 minute mark.
- Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, water, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.
